Rhubarb Slush

A refreshing summer drink with rhubarb, strawberry jello, and rum!
  • 8 c. rhubarb, diced
  • 8 c. water
  • 3 c. sugar
  • 1 sm package strawberry jello
  • 2 c. rum
  • Ginger ale
  1. Combine the rhubarb, sugar and water in a large stock pot
  2. Bring to a boil and cook 5 minutes until rhubarb is broken down
  3. Remove from heat and strain into an ice cream pail
  4. Add jello packet
  5. Let cool to room temperature
  6. Add rum
  7. Freeze overnight
  8. To serve:
  9. Add slush to a glass about ¾ full
  10. Top with ginger ale and enjoy!
