Valentine’s Day Chicken Parmesan

Who has Valentine’s Day on a Tuesday anyway?? The day started out fine, we all exchanged our Valentine cards in the morning. Alexa was going to make supper because I was beat, the last few weeks have been brutally busy, and Monday I really didn’t feel great. Plus, I had a council meeting at 7 pm…on Valentine’s Day. It was all downhill from there. As my daughter was on her way back from school to the town where I work, her alternator went out. While, technically this isn’t the end of the world, when your 17 years old and you car is a huge junker, it kind of is. She didn’t make it home til 5:30, while I got home at 5. I had just about enough time to whip up the chicken parmesan and 6 cheese noodles for supper and head out to my next meeting. Since she was going to cook this herself I found an easy recipe for her to follow: https://easyrecipedepot.com/recipe/easy-oven-baked-chicken-parmesan/ and I had all the ingredients layed out already so it went together pretty quickly. As the chicken baked, I prepared the noodles.

VALENTINE'S DAY CHICKEN PARMESAN

Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 egg
  • ¼ c. milk
  • 1 c. Italian bread crumbs
  • 1 jar spaghetti sauce
  • 1 c. shredded Italian cheese blend

Notes

INSTRUCTIONS
  1. Preheat oven to 400
  2. Combine milk and egg in a bowl
  3. Put breadcrumbs on a separate plate
  4. Dunk chicken in milk/egg mixture then in breadcrumbs
  5. Place in a 9 X 13 glass baking dish
  6. Bake uncovered 20 min
  7. Take chicken out of the oven and top with sauce and shredded cheese
  8. Bake another 10-15 min until cheese is melted

The chicken is breaded in italian seasoned panko bread crumbs and baked for about 20 min. Then just put your favorite spaghetti sauce on top, as much as you like, and top with a shredded Italian cheese blend and bake for about 15 more minutes until the cheese is melted and bubbly. It’s Valentines Day, you have to splurge a bit. I also had some cheese stuffed bread sticks in the freezer, Alexa and I love those. Scott didn’t realize there was cheese in them until we told him. Good thing he has us to keep him up to date on stuff like that!

The dinner kind of saved the day, and the cute stuffed bear from Scott.  Dinner was quick and delicious. Alexa and Scott set the table and helped clean up after. The three of us had a nice supper together before we went our separate ways for the evening. But no wine for me until later. The struggle was seriously REAL.

What, wait, isn’t there four members in our family you ask?? Why yes, there is. Brett had other plans for Valentine’s Day with his girlfriend, so we let him off the hook this year. BTW I finally got have a glass of wine at 9 o’clock. It was delicious!
