Tarragon Chicken Pasta Salad

This tarragon chicken pasta salad uses some fresh tarragon that I have been growing in my herb garden.I’m not much of a gardener but I do like to grow fresh herbs in the summer time. I’ve noticed that the winters get longer as I get older and I have to spend as much time outside as I possibly can in the summer to get through these long, cold Minnesota winters.

Chicken salad is so good. I make it many different ways in the summer. This is a new variation on my old favorite. I thought to add the swiss cheese after I had a chicken salad sandwich at a restaurant once and it had a slice of swiss cheese on it, along with the baby greens. It adds a nice flavor to the dish. Cheese has a knack for making everything better, in my opinion.

This could be made with or without the pasta. I made a chicken salad sandwich with some of this before adding the pasta. It is very good that way also. On a croissant bun–delish! I added the pasta for a quick meal. This will keep in the fridge up to three days. Confession, I don’t cook much during the week. Once I get home from work I do not feel like cooking. It is nice to have something quick to eat after a long day. It’s been a brutally hot summer and it’s nice to not have to turn the oven on at night either.

The tarragon in this chicken salad adds a nice herby flavor. I have never tried tarragon in cold salad before so I wasn’t sure how it would be. It was well received by myself and Scott. He’s way harder to impress than I am. He doesn’t fancy himself as much of a pasta salad guy but he will try anything, if I make him. He asked “What was that pasta salad in the fridge? It was really good.” Well there you go! The ultimate compliment lol!

Ingredients
  • 4 c. shredded cooked chicken
  • 1 c. mayonnaise
  • ¾ tsp salt
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 3 T fresh tarragon
  • 1 c. cooked pasta (I used Ditalini)
  • 2 T chopped fresh parsley
  • 3 T diced red onion
  • ½ c. diced celery
  • shredded swiss cheese for garnish
Instructions
  1. Combine all ingredients in a bowl and stir to combine.
  2. Serve on a bed of baby greens and garnish with swiss cheese.
  3. Enjoy
