Pineapple Lemonade Pops

These pineapple lemonade pops are so refreshing and have two of my favorite summer time ingredients. Since we are all cooking at home more I bought myself a silicone popsicle maker. It’s probably the best purchase I’ve made all summer. I have long list of different popsicles to make so stay tuned.

This one was super simple and quick and a great way to get a trial run out of my popsicle maker.

I used fresh pineapple but frozen would work just as well. Make sure it is very ripe, the sweeter the pineapple the sweeter the popsicles. I like to have one after I take the dog for a walk, to cool off. They would also be good with vodka, but what isn’t good with vodka–am I right?

Just add all the ingredients to a blender or I used my Nutri-Bullet and it worked very well! and pour into the molds. Freeze overnight for best results.

A great refreshing summer treat

Ingredients
  • 1 cup diced, very ripe pineapple
  • 1 lemon juiced
  • ½ cup water
Instructions
  1. Put all ingredients into a blender and blend until smooth.
  2. Pour into popsicle molds and freeze overnight.
  3. Enjoy
