BUTTERSCOTCH PUDDING MUFFINS

Ingredients
  

  • 2 cups all purpose flour
  • 1 cups  sugar
  • 1 pk instant butterscotch pudding
  • 1 pk instant vanilla pudding
  • 2 tbsp baking powder
  • 1 tbsp salt
  • 1 cup water
  • 4  eggs
  • 3/4 cups vegetable oil
  • 1 tbsp  vanilla extract
  • 2/3 cup  brown sugar
  • 2 tbsp ground cinnamon
  • 1/2 cup chopped pecans (optional)

Notes

INSTRUCTIONS
  1. Combine flour, sugar, pudding mixes, baking powder and salt in a mixing bowl.
  2. Combine water, eggs, oil, and vanilla in a separate bowl; stir into the dry ingredients until moistened.
  3. Fill paper lined muffin cups ⅔ full.
  4. Combine topping ingredients and sprinkle over batter.
  5. Bake at 350 for 15-20 min until toothpick comes out clean.
  6. Cook for 5 min before removing from the pan.
