Cracker Fish Crust

Ingredients
  

  • 1 sleeve Saltine crackers
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 6-8 good size fish fillets
  • 8 T butter
  • 8 T oil

Equipment

  • 1 food processor
  • 1 casserole dish
  • 1  pan
  • 1 paper towel lined cookie sheet

Method
 

  1. Crush the sleeve of saltine crackers in a food processor
  2. Add the Cajun seasoning, garlic powder and paprika to the processor and blend until combined.
  3. Put on a plate or in a casserole dish.
  4. Place fish 2-3 at a time in the fish crust and press coating on to fish. Let sit for a couple minutes.
  5. Heat 3 T butter and 3 T oil in a cast iron skillet
  6. Place fish in pan and cook on both sides until browned and crispy. About 3 min per side.
  7. Add butter and oil as needed to finish cooking the rest of the fish.
  8. Keep the cooked fish warm on a paper towel lined cookie sheet in a very low oven about 200 degrees
