Shredded Beef Quesadilla

Ingredients
  

  • 2 flour tortillas
  • c shredded beef
  • ½ c. pepper jack cheese
  • 2 T butter
  • Toppings:
  • lettuce
  • onions
  • sour cream
  • salsa
  • avocado
  • lime
  • cilantro

Method
 

  1. Heat a small cast iron pan over medium heat
  2. Heat the shredded beef in the microwave for about 30 seconds
  3. Butter one side of each tortilla
  4. Lay on tortilla butter side down in the cast iron pan
  5. Put warmed shredded beef on top of the tortilla
  6. Add shredded cheese on top of the beef
  7. Top with other tortilla, butter side up
  8. Once the bottom tortilla is golden brown flip it to the other side
  9. Cook until golden brown and cheese is melted-about 3-4 minutes
  10. Cut into quarters
  11. Serve with toppings
